Recipe of the Week

Here is a recipe that I tried this week. It was a bit hit in our house. Even the rugrats ate it!

Simple Polynesian Sweet & Sour Chicken
  • 2 chicken breasts cut into 1" pieces
  • 1 small onion
  • 1 bell (green) pepper
  • 1 20oz. can pineapple chunks
  • 1 Tbsp. cornstarch
  • 2 Tbsp. worstershire sause
  • 2 Tbsp. ketchup
  • 1 Tbsp. honey
  • 2 Tbsp. cooking oil

    Heat oil in skillet. Add chicken. Cook 3-5 minutes until outside is starting to brown slightly. Drain pineapple reserving juice in small bowl. Add to pineapple juice, the ketchup, worstershire sauce, honey, and cornstarch. Mix well. Chop onion and bell pepper into bite-sized pieces. Add chopped pepper to chicken and cook for about 3 minutes more. Then add your liquid sauce, onion, and pineapple. Cook another 4-6 minutes until onion is tender and sauce starts to thicken. Serve over rice.
